Baked Apple Rings

Ingredients
- 3 large Boskop apples
- 1 Organic lemon
- 150 g spelt whole‑grain flour
- 175 ml milk
- 2 tbsp Rapeseed oil
- 3 eggs
- 0.5 Vanilla bean
- 1 pinch salt
- 3 tbsp coconut palm sugar
- 3 tbsp clarified butter
- 1 tsp cinnamon

Peel the apples, remove the core with an apple corer and slice them into thick rounds. Wash the lemon in hot water, pat dry, grate the zest and squeeze out the juice. Drizzle the apple slices with lemon juice.

Separate the eggs. Whisk together flour, milk, oil, egg yolks, scraped vanilla seed and 1 tsp lemon zest. Beat the egg whites with salt and 2 tbsp coconut palm sugar until stiff peaks form, then fold into the batter.

Heat 1 tbsp clarified butter in a (non‑stick) pan.

Dip each apple slice into the batter one at a time and fry portions of them in the hot butter until golden brown on both sides.

Lift the baked apple rings onto paper towels to drain. Mix remaining coconut palm sugar with cinnamon and sprinkle over the rings. Serve with a scoop of vanilla ice cream if desired.
