Pappardelle with Salsiccia

Ingredients

  • 500 g pappardelle
  • Salt
  • 1 tbsp red peppercorns
  • 3 Garlic cloves
  • 400 g salsiccia
  • 2 tbsp olive oil
  • 0.5 tsp paprika powder (sweet)
  • 2 sage leaves
  • 1 tsp butter
  • 20 g grated Parmesan
  • sage leaf (for garnish)

Instructions

    Cook the noodles in salted water until al dente.

    While the pasta cooks, crush the peppercorns in a mortar. Peel and thinly slice the garlic. Slice the salsiccia into thin rounds. Heat the oil and sauté the garlic for 2-3 minutes. Sprinkle with paprika. Add the sausage slices and cook for about 2 minutes while stirring. Wash, dry, shake off excess moisture, and finely chop the sage.

    Drain the noodles and toss them with the garlic-sausage mixture. Fold in the sage, red peppercorns, and butter. Season with salt, sprinkle with parmesan, and serve garnished with sage.
