Spaghetti with Ground Meat Sauce

Ingredients
- 1 onion
- 2 Garlic cloves
- 2 carrots
- 2 tbsp olive oil
- 250 g ground beef
- 400 g diced tomatoes (canned)
- 1 tsp lemon zest
- Salt
- Pepper (freshly ground)
- 400 g spaghetti
- 4 tbsp parsley
- 4 tbsp freshly grated Parmesan

Peel and finely chop the onion and garlic. Peel the carrots and dice them into small cubes. Heat the olive oil in a pan and sauté the onions until translucent. Add the ground beef and cook, breaking it up with a spoon until crumbly. Add the tomatoes, carrots, and lemon zest, seasoning with salt and pepper. Simmer covered over low heat for 30-40 minutes.

Cook the spaghetti in plenty of salted water according to package instructions until al dente. Drain.

Wash and finely chop the parsley.

After cooking, stir the pasta into the sauce and warm through. Taste again and divide among four plates. Sprinkle with freshly chopped parsley and Parmesan before serving.
