Spaghetti with Green Beans and Parmesan

Ingredients

  • 500 g green beans (as tender as possible)
  • 1 tbsp chopped bean herb
  • 2 sprigs bean herb
  • Salt
  • 400 g spaghetti
  • 1 onion
  • 1 Garlic clove
  • 1 tbsp Olive Oil
  • 250 g heavy cream
  • 150 ml vegetable broth (instant)
  • 125 g grated parmesan cheese
  • freshly ground pepper

Instructions

    Wash and trim the beans, cutting them into about 4 cm pieces.

    Bring a generous amount of salted water to boil with the three sprigs of bean herb; add spaghetti and beans and cook until al dente.

    Meanwhile peel and finely dice onion and garlic; sauté in oil until translucent, then pour in cream and broth and simmer until thickened.

    Stir in about 100 g parmesan and heat briefly.

    Drain the bean-spaghetti into a colander, mix with the sauce, and serve sprinkled with parmesan.
