Ingredients

- 4 chicken thighs
- Salt
- Pepper (freshly ground)
- 3 tbsp oil
- 1 tbsp butter
- 1 onion
- 2 Garlic cloves
- 0.5 tsp rosemary (chopped)
- 0.5 tsp thyme (chopped)
- 1 tbsp mustard
- 1 tsp paprika powder, hot
- 500 g cherry tomatoes
- 1 onion
- 3 tbsp oil
- 2 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- a pinch sugar
- 1 tbsp chives
Instructions

Rub the chicken thighs with salt and pepper and brown them all sides in a pan with 2 tbsp oil and butter over medium heat, then simmer for about 25 minutes on low heat. Add a little water if needed.

Meanwhile peel and finely chop the onion and garlic. Mix the herbs with mustard, paprika and remaining oil into the onion mixture.

After 15 minutes of simmering, brush the thighs on both sides with the paste and finish cooking, turning frequently.

Wash the tomatoes and slice them. Peel the onion and dice it small.

Stir oil with vinegar, onion, salt, pepper and sugar; fold in tomatoes and sprinkle with chives.
