Ingredients

  • 500 g spaghetti
  • Salt
  • 1 untreated lime
  • 4 sprigs thyme
  • 3 tbsp olive oil
  • 1 young garlic bulb
  • pepper (from grinder)

Instructions

    Cook the spaghetti in boiling salted water for 10-15 minutes until al dente. Meanwhile, rinse the lime under hot water, pat dry and cut into eight wedges. Wash and shake off excess moisture from the thyme.

    Heat the oil in a pan and fry the lime wedges, garlic bulb, and thyme while turning them. Add the cooked pasta to the pan, optionally adding a splash of pasta water, toss briefly, then plate with lime slices, thyme, and a sliver of garlic. Season with pepper before serving.
