Ingredients

  • 1 tsp black peppercorns
  • 1 tsp white peppercorns
  • 1 tsp pink pepper berries
  • 1 tsp coriander seeds
  • 1 tsp chopped rosemary
  • 1 tsp chopped thyme
  • 4 rib‑eye steaks (≈200 g each)
  • 2 tbsp plant oil
  • Salt
  • thyme for garnish

Instructions

    Preheat the oven to 100 °C fan. Place the various peppercorns and coriander in a mortar and crush roughly. Mix in the rosemary and thyme. Sprinkle the mixture onto a flat plate.

    Rinse the beef steaks, pat dry, and coat with the spice mix. In a large pan, sear each side in hot oil for about 3‑5 minutes, depending on desired doneness. Season with salt and wrap in foil. Then rest in the preheated oven for 8‑10 minutes.

    Remove, garnish with thyme if desired, and serve.
