- 600 g Potatoes
- Salt
- 2 tbsp olive oil
- 1 untreated lemon
- 560 g sea bass fillet (4 sea bass fillets)
- 2 cloves garlic
- 75 ml fish stock
- 1 tsp Honey
- black pepper (freshly ground)
- 2 tbsp freshly chopped herbs (e.g., rosemary and tarragon)

Preheat the oven to 180°C fan.

Peel the potatoes and cut them into sticks. Toss with salt and oil, then spread on a parchment-lined baking tray and roast for about 25 minutes until golden brown, turning occasionally.

Wash the sea bass, pat dry, season with salt and pepper, then sear in the remaining hot oil in a non-stick pan for about 3-4 minutes per side. Finish by deglazing with fish stock and lemon juice, letting it simmer briefly. Stir in honey and zest, seasoning to taste.

Add the garlic to the potatoes at the end, season with pepper, and plate the sea bass on bowls, drizzle with the pan sauce, and serve alongside the potatoes.
