Ingredients
- 4 Carrots
- 2 tbsp olive oil
- 4 Garlic cloves
- 250 g heavy cream
- Salt
- Pepper (freshly ground)
- nutmeg
- 1 tbsp Lemon Juice
- 350 g spaghetti
- 50 g freshly grated Parmesan
Instructions

Peel, wash and finely grate the carrots. Peel the garlic.

Heat the olive oil in a wide pot and squeeze in the garlic.

Add the carrots and sauté for about 5 minutes. Then pour in the cream and simmer for another 5 minutes, seasoning with salt, pepper, nutmeg, and lemon juice.

Meanwhile cook the pasta in plenty of boiling salted water until al dente, then drain and set aside.

Stir the Parmesan into the carrot sauce, combine with the spaghetti, and serve on plates.
