South African Style Meatloaf

The South African style meatloaf from Spoonsparrow brings delightful flavors and healthy nutrients to the plate!

Ingredients

  • 1 roll
  • 250 ml milk
  • 1 kg ground beef
  • 1 onion (peeled and chopped)
  • 1 garlic clove (chopped)
  • 100 g raisins
  • 100 g almonds (sliced)
  • 1 tbsp apricot jam
  • 2 tbsp mango chutney
  • 25 ml lemon juice
  • 1 tbsp curry powder
  • 1 tbsp cardamom
  • Salt
  • black pepper (ground)
  • 2 tbsp olive oil
  • 2 Eggs
  • 2 Bay leaves
  • 0.5 Mango
  • 1 Banana

Instructions

    Soak the roll in half the milk, then squeeze out excess and add to the ground beef.

    Heat the oil in a pan and sauté onion with garlic. Add the meat mixture and cook slowly, stirring for about 10 minutes until crumbly. Stir in curry, then mix with raisins, almonds, apricot jam, chutney, lemon juice, and cardamom. Remove from heat and season with salt and pepper. Transfer the mixture to a baking dish.

    Peel and slice the mango into wedges; peel and cut the banana diagonally into thick slices. Arrange both on top of the meatloaf.

    Whisk the eggs with the remaining milk and pour over the meat, placing bay leaves on top. Bake in a preheated oven at 180°C for about 25‑30 minutes until golden brown.
