Sour Spicy Shrimp Curry

Ingredients

  • 750 ml chicken broth
  • 125 g straw mushroom
  • 2 cloves garlic (chopped)
  • 1 stalk lemongrass
  • 5 green Thai chilies
  • 3 lime leaves
  • 2 slices fresh galangal
  • 200 g shrimp (pre‑cooked)
  • lime juice
  • fresh coriander for garnish

Instructions

    Clean and slice the mushrooms. Cut the lemongrass stalk into about 3 cm pieces. Wash the chilies and cut them diagonally into slices.

    Bring the chicken broth to a boil, then reduce heat. Add garlic, lemongrass, mushrooms, chili, lime leaves, galangal and 1 tbsp fish sauce; simmer for about 4 minutes. Add shrimp and cook for another minute. Remove the lemongrass. Finish with fish sauce and lime juice, garnish with coriander leaves, and serve.
