Ingredients

  • 500 g spinach leaves
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp butter
  • 1 tbsp Sesame seeds
  • 12 shrimp (with tails, ready to cook)
  • 2 Garlic cloves
  • juice of 1 lemon
  • 5 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Wash, trim, and rinse the spinach. Blanch in a large pot with lightly boiling salted water until wilted. Drain, shock in cold water, dry thoroughly, then chop finely. Peel and finely mince the shallot and garlic; sauté in hot butter for about 4 minutes, then stir in sesame seeds.

    Peel and finely mince the remaining garlic. Prepare a dressing by mixing olive oil, minced garlic, salt, and pepper; adjust with lemon juice to taste.

    Wash the shrimp, pat dry, and brush with the dressing. Thread three shrimp onto each skewer and brush again with dressing. Grill over high heat, turning every few minutes, for 6 minutes total, brushing with more dressing as needed. Drizzle with remaining lemon juice before serving.

    Divide the spinach into four bowls and place two skewers in each bowl.
