Ingredients
- 250 ml apple cider vinegar
- 2 onions
- 3 tbsp spice mix (for sour roast)
- 2 tbsp brown candied sugar
- 1 kg beef (e.g., shoulder)
- Salt
- Pepper
- 2 tbsp clarified butter
- 125 ml clear vegetable broth
- 50 g brown cake crumbs
- 250 g baked fruit
- 125 ml apple juice

Boil vinegar and 0.5 l water. Chop onions finely and add them with the spices. Pour the cooled mixture over the meat. Marinate for 2–3 days.

Strain the marinade. Pat the meat dry and rub it with salt and pepper. Sear it in hot clarified butter until browned on all sides. Add about 1/8 l of the marinade and broth. Break in the brown cake crumbs. Cover and simmer for 1 ¼ hours. Boil the baked fruit with apple juice and set aside.

Let the meat rest for 15 minutes. Puree or strain the sauce, add the baked fruit, and let it gently simmer. Slice the meat. Serve with boiled potatoes and savoy cabbage.
