Ingredients

  • 700 g starchy potatoes (from previous day)
  • 300 g cooked meat (from previous day, e.g., schnitzel, cold roast, soup meat)
  • 1 onion
  • 8 eggs
  • 100 ml milk (or cream)
  • Salt
  • pepper (ground)
  • Nutmeg (freshly grated)
  • cumin (ground)
  • 4 tbsp clarified butter
  • 4 tbsp chopped parsley

Instructions

    Peel the potatoes and cut them into cubes. Slice the meat into strips. Peel, halve, and slice the onion into rings. Whisk the eggs with milk and season with salt, pepper, nutmeg, and a pinch of cumin.

    Heat 1 tbsp clarified butter in a large pan. Sauté the onions until translucent, then add the potatoes and cook until lightly browned. Remove them, heat another tablespoon of butter, and brown the meat on all sides. Return to the pan, pour in the egg mixture, and sprinkle with potatoes, meat, onions, and parsley. Let it set and serve.
