Sweet Omelettes with Quark Cream

- 250 g heavy cream
- 300 g quark
- 3 tbsp honey
- 4 tbsp quince jam
- 4 eggs
- Salt
- 1 tsp grated lemon zest
- 40 g sugar
- 75 g flour
- 3 tbsp milk
- 2 tbsp clarified butter
- 300 g grapes (green and blue)
- powdered sugar for dusting

Whip about two-thirds of the cream until stiff. Mix the quark with the remaining liquid cream, vanilla sugar, honey, and quince jam. Fold in the stiffened cream and refrigerate.

Separate the eggs for the omelette. Beat the egg whites with a pinch of salt until very stiff. Whisk together the yolks with lemon zest, sugar, flour, and milk, then fold in the beaten egg whites. In a hot pan, melt a little clarified butter and cook each omelette one at a time: pour about one-quarter of the batter into the pan (use two pans if needed) and bake over low heat until golden brown.

Arrange the cream on plates. Wash the grapes, remove stems, and scatter them over the cream. Place the omelettes on top, dust with powdered sugar, and serve.
