Ingredients

  • 1.5 kg sour cherries
  • 0.5 kg sweet cherries
  • 5 cm fresh ginger
  • 1 kg gelatin sugar (2:1)

    Pit the cherries. Peel and finely grate the ginger. Place the fruit in a blender and puree until smooth. If desired, strain through a sieve. Mix the cherry purée with the grated ginger. Transfer everything to a large pot, add the gelatin sugar, and let the juice draw out.

    After about 1 hour, stir the cherries well and heat them. Stir continuously until they boil vigorously. Boil for 4 minutes. Then fill sterilized screw-top jars to the brim. Seal tightly, place on the lid, and cool for 10 minutes. Afterwards flip and allow to cool completely. Label and store in a dark place.
