- 100 ml milk
- 25 g butter
- 25 g flour
- 2 egg whites
- 2 yolks
- 2 tbsp lemon juice
- 45 g lavender honey
- 2 Apples (Granny Smith)
- lavender buds (for garnish)
- apple cubes (for garnish)
Instructions

Butter 4 soufflé molds (about 8 cm) and dust with sugar. Bring milk to a boil in a small pot, knead flour and butter into a roll, then cut the roll into small pieces.

Stir the flour‑butter pieces into the boiling milk one at a time until a homogeneous mixture forms. Remove the pot from heat and quickly whisk in an egg white.

Add lemon juice and mix well. Preheat the oven to 200°C (400°F) with top and bottom heating.

Transfer the pot contents to a bowl and let cool. Gradually add the yolks, whisking with a whisk until the mixture is smooth and creamy. Peel, core, and dice the apples; fold the cubes into the batter. Whip the remaining egg white with honey until stiff peaks form, then gently fold it into the apple mixture.

Fill the soufflé batter up to 1 cm below the rim of each mold. Prepare a water bath with hot water reaching halfway up the molds. Place the molds in the water bath and bake in the preheated oven for about 30 minutes. Remove from the oven, garnish with lavender buds and apple cubes, and serve hot.
