Ingredients

  • 1 l milk
  • 6 egg whites
  • 6 tbsp sugar
  • 0.5 l milk
  • 0.5 Vanilla bean
  • 2 egg yolks
  • 40 g sugar
  • 2 tsp cornstarch
  • 150 g strawberries (frozen or fresh)
  • 150 g sugar

Instructions

    Let the strawberries thaw or wash for the strawberry sauce.

    Bring the milk to a boil in a pot for the snowballs. Whisk the egg whites into stiff peaks, gradually adding sugar and continuing to whisk. Using a tablespoon, scoop portions of the batter and drop them into the boiling milk. Cook gently for about 1 minute while turning carefully. Drain the snowballs in a sieve and repeat until all the meringue is used.

    Heat the milk with the scraped vanilla bean for the sauce. Whisk the egg yolks with sugar until frothy, then stir in the cornstarch. Gradually whisk in the hot milk. Return the mixture to the pot, bring to a boil while stirring, remove from heat and serve on deep plates.

    Blend the strawberries with sugar until dissolved for the strawberry sauce.

    Place the snowballs on the vanilla sauce and garnish with the strawberry sauce.
