Smørrebrød with Smoked Salmon

Celebrate Midsummer with us! This delicious Smørrebrød with smoked salmon from Spoonsparrow is the perfect accompaniment.

Ingredients

  • 3 tbsp thick yogurt (3.5% fat)
  • 1 tbsp Lemon Juice
  • 150 g cooked deep-sea shrimp
  • Salt
  • Pepper (freshly ground)
  • 0.5 cucumber
  • 3 tbsp crème fraîche
  • 1 handful Lollo bionda lettuce
  • 6 Radishes
  • 8 slices whole grain bread
  • 2 tbsp garden cress
  • 8 slices smoked salmon
  • 2 tbsp dill sprigs
  • Lemon zest (for garnish)

Instructions

    Mix yogurt, lemon juice and shrimp, season with salt and pepper. Peel the cucumber, halve lengthwise, scoop out the seeds and dice finely. Mix with crème fraîche. Wash the lettuce, shake dry and fluff if necessary. Wash, clean and slice the radishes thinly.

    Top four slices of whole grain bread with lettuce, shrimp and radishes, and garnish with fresh cress. Cut the remaining slices in half diagonally, top with cucumber cubes and smoked salmon. Sprinkle with dill and lemon zest over the Smørrebrød with smoked salmon.
