Colorful Sausage Salad – Smarter

The colorful sausage salad with cucumber and radishes from Spoonsparrow is a light alternative to the southern German classic!

Ingredients

  • 1 red bell pepper
  • 1 small cucumber
  • 1 bunch radishes
  • 200 g poultry slices
  • 50 g red onions (1 red onion)
  • 1 bunch chives
  • 1 packet garden cress
  • 2 tsp sharp mustard
  • 1 tsp grated horseradish (jar)
  • 3 tbsp apple cider vinegar
  • Salt
  • Pepper
  • 3 tbsp Rapeseed oil

Instructions

    Halve the bell pepper, remove the seeds, wash, cut into strips and place in a large bowl.

    Wash the cucumber and radishes thoroughly, pat dry and peel.

  3. 3.

    Peel the cucumber with a vegetable peeler to create dark green strips, and cut the cucumber into very thin slices.

    Also cut the radishes into thin slices and add them to the cucumber in the bowl.

    Cut the poultry slices into strips.

    Peel the onion, quarter it and cut it into thin strips. Wash the chives, shake dry and cut into rolls. Cut the cress with scissors from the bed. Mix everything with the sausage strips and vegetables.

    Mix mustard and horseradish with vinegar, salt and pepper in a small bowl. Whisk in the oil with a whisk until a creamy sauce is formed. Mix into the salad ingredients and serve immediately.
