Ingredients

  • 1 tbsp lime juice
  • 2 tbsp white balsamic vinegar
  • 2 tbsp Rapeseed oil
  • 2 tbsp olive oil
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • Salt
  • Pepper
  • 4 oz arugula (3 handfuls)
  • 7 oz cherry tomatoes
  • 1 ripe Mango
  • 2 Avocados
  • 8 slices whole wheat bread

Instructions

    Whisk together the lime juice, vinegar, and both oils for the vinaigrette. Whisk in the honey and mustard and season with salt and pepper.

    Wash the arugula and spin dry. Wash and halve the tomatoes. Peel the mango, cut the flesh away from the pit, and dice it. Halve the avocados, remove the pit, scoop out the flesh, and dice it as well. Mix all salad ingredients in a bowl with the vinaigrette and arrange on 4 plates. Toast the whole wheat bread lightly if desired and serve with the salad.
