Ingredients

  • 200 g smoked salmon
  • 3 tbsp Lemon juice
  • 0.5 tsp mustard
  • 2 tbsp grape seed oil
  • Salt
  • freshly ground pepper
  • 150 g rocket
  • 1 small onion
  • 100 g sheep cheese
  • 4 tsp black sesame

Instructions

    Arrange the salmon slices on plates, leaving one aside for garnish. Cut the reserved slice into eight strips. Whisk lemon juice, salt, pepper, mustard and oil to make a vinaigrette; drizzle half over the salmon. Peel and thinly slice the onion into rings. Rinse, clean and drain the rocket thoroughly.

    Toss the onion rings with the rocket, crumble sheep cheese on top, marinate with the remaining vinaigrette, and plate on the salmon slices. Sprinkle sesame seeds before serving. Offer crackers as desired.
