Smoked Salmon Terrine

Ingredients

  • 10 slices smoked salmon
  • 1 stalk Celery
  • 0.5 bunch dill
  • 6 sheets gelatin
  • 250 g quark
  • 150 g thick milk
  • 1 tbsp horseradish (fresh grated or jarred)
  • Salt
  • ground pepper
  • Lemon juice

Instructions

    Line a small baking dish (15 x 22 cm) with cling film. Place six slices of salmon on the bottom of the dish.

    Soak gelatin in cold water.

    Clean, wash and dice celery into very small cubes. Cut remaining salmon into thin strips. Wash dill and shake dry. Set aside a few small sprigs for garnish and finely chop the rest.

    Whisk quark with thick milk and horseradish; season with salt, pepper, and lemon juice. Fold in celery, salmon strips, and chopped dill.

    Gently melt gelatin in a small pot over low heat until liquid. Quickly stir gelatin into the quark mixture and pour into the dish. Cover and refrigerate overnight to set. Before serving, unmold and garnish with remaining dill.
