Mozzarella Skewers

Colorful vegetable skewers paired with mozzarella on a stick. Bell peppers rank high among the best sources of vitamin C.

Ingredients

  • 400 g bell peppers (1 red, 1 yellow, 2 additional peppers)
  • 250 g Zucchini (1 Zucchini)
  • 250 g mozzarella (9% fat; 2 balls)
  • 16 green olives (filled with almonds; jar)
  • 5 basil stems
  • 1 tsp red peppercorns
  • 0.5 tsp black peppercorns
  • 0.5 lemon
  • 1 tsp Honey
  • Salt
  • 2 tsp dried oregano
  • 4 tbsp Mediterranean vegetable broth
  • 1 tbsp Olive Oil

Instructions

    Halve the bell peppers, remove seeds, wash and cut into about 2 cm pieces.

    Wash, trim, and slice the zucchini into about 1 cm thick rounds.

    Drain the mozzarella and cube it. Drain the olives in a sieve as well.

    Wash the basil, shake dry, pluck leaves, and cut into fine strips.

    Coarsely crush peppercorns and black pepper in a mortar. Alternate threading bell pepper, zucchini, olive, and mozzarella onto 12 wooden skewers.

    Squeeze half a lemon and measure out 2-3 tbsp of juice.

    Whisk lemon juice with honey, 3 tbsp water, salt, oregano, vegetable broth, and olive oil in a bowl. Drizzle over the skewers. Sprinkle basil and pepper mixture on top and serve.
