Ingredients

  • 800 g pumpkin (e.g., muskmelon)
  • 1 tbsp Olive Oil
  • Salt
  • Pepper (freshly ground)
  • 250 g goose fat (flamed)
  • 1 onion
  • 1 tsp freshly chopped marjoram

Instructions

  1. 1.

Preheat the oven to 180 °C with top and bottom heat.

  2. 2.

Peel the pumpkin, remove fibers and seeds, and cut into small cubes. Drizzle with a little oil, lightly salt and pepper, spread on a baking sheet, and bake in the preheated oven for about 40 minutes, turning occasionally.

  3. 3.

Cut the goose fat into small cubes. Peel and finely chop the onion. Sauté the fat, onion, and marjoram in a pot over low heat while stirring occasionally. Let it simmer gently for about 10 minutes, then strain through a sieve and season with salt and pepper.

  4. 4.

Remove the pumpkin from the oven and mash with a fork. Mix into the goose fat cream, pour into well-sauced jars, and let cool. Serve on fresh farmer’s bread.
