Salmon Mousse Bites

Ingredients
- 5 sheets of white gelatin
- 250 g smoked salmon
- Salt
- 1 tbsp Lemon Juice
- 250 ml heavy cream
- white pepper (freshly ground)
- 2 sprigs dill
- 40 ml vodka
- 50 g caviar
- 8 slices toast bread

Soak the gelatin in plenty of cold water. Meanwhile, finely dice the salmon and blend it with salt and 2 egg yolks and lemon juice until smooth, gradually adding half of the cream. Transfer the mixture to a bowl and season with salt and pepper. Squeeze out excess water from the gelatin and dissolve it in warm vodka, then let it cool slightly before stirring into the mousse.

Whip the remaining cream stiffly and fold it into the mixture. Pour the mousse into a container, cover with plastic wrap, and refrigerate for at least 4 hours to set. To serve, toast the bread slices, cut them into rounds, spread half of the mousse on one side and the rest on the other, then stack them together. Top each bite with a teaspoon of caviar on either side, garnish with dill sprigs and a wedge of lemon.
