Ingredients
- 200 g yogurt
- 1 tbsp Lemon Juice
- Salt
- pepper (ground)
- 2 tsp grated horseradish (jar)
- 1 bunch chives (~30 g)
- 12 chicory leaves
- 12 slices smoked salmon
- 4 Tbsp mayonnaise
- 1 red bell pepper
- 12 crackers
- 1 tbsp capers
- 1 tbsp stuffed olives (cut into fine rings)
Instructions

For the yogurt dip, whisk together yogurt, lemon juice, salt, pepper and horseradish; season to taste and refrigerate until serving.

For the bites, cut chives into ~5 cm pieces. Wash chicory, remove tough core and slice into wide strips. Wash bell pepper, deseed, strip off white membranes and cut into strips. Spread a small amount of mayonnaise on each salmon slice, top with chicory strips, then add pepper, chives and crackers; roll up. Tie with extra chives if desired. Arrange on a platter, garnish with capers and olive rings, and serve with the yogurt dip.
