Spicy Pizza with Sardines and Onions

Ingredients
- 1 cube fresh yeast (42 g)
- 500 g flour
- 1 tsp salt
- olive oil
- 20 sardines (ready-to-eat, headless and boneless, brined in salt water)
- 4 large onions
- 2 green chili peppers
- 2 Garlic cloves
- flour (for the work surface)
- 12 tbsp chopped tomatoes (pizza tomatoes)
- pepper (ground)
- 150 g freshly grated Parmesan
Instructions

Dissolve the yeast in 250 ml lukewarm water. Mix the flour with the salt in a bowl, create a well in the center, pour in the yeast mixture and 3 tbsp olive oil, and knead into a smooth dough using an electric hand mixer or by hand. If the dough feels too wet, add more flour; if it’s too dry, add a little more lukewarm water.

Knead the dough on a floured surface for 10 minutes, cover, and let rise in a warm place for 1 hour.

Preheat the oven to 220°C with upper and lower heat.

Rinse the sardines, pat them dry, and open them.

Peel the onions, halve them, and slice into thin strips. Wash the chilies and cut into fine rings.

Peel the garlic cloves and finely chop them.

Knead the dough again briefly, divide it into 4 equal portions, roll each into a thin flatbread, and place on parchment-lined baking trays.

Spread the chopped tomatoes over the dough, lightly salt and pepper, then top with onions, chilies, sardines, garlic, and parmesan. Bake in the preheated oven for about 20 minutes.

Remove from the oven and serve immediately.
