Ingredients
- 2 bulbs fennel
- 1 small kohlrabi
- 4 tbsp white balsamic vinegar
- 3 tsp sugar
- 50 ml olive oil
- 1 tsp fennel seeds
- Salt
- pepper (ground)
- 100 g Strawberries
- 1 tsp thyme leaves
- 1 tsp raspberry vinegar
- 150 g smoked salmon (slices)
- fresh thyme for garnish

Clean and wash the fennel and kohlrabi. Slice the fennel into thin strips, halve the kohlrabi and cut it into very thin slices. Toss the vegetables with balsamic vinegar, 1 tsp sugar, olive oil and fennel seeds, season with salt and pepper, and let chill until serving.

Meanwhile wash, clean and chop the strawberries. Mix them with thyme, raspberry vinegar and the remaining 2 tsp sugar, then let the mixture rest for 30 minutes to draw out juice.

Arrange the chilled vegetables and strawberry sauce on plates, top with sliced smoked salmon, and garnish with fresh thyme.
