Ingredients
- 1 egg
- 4 thin slices rye bread
- 20 g soft butter
- 4 leaves Lollo Rosso lettuce
- 8 slices smoked salmon
- 2 tbsp honey
- 2 tbsp medium-hot mustard
- Salt
- parsley (for garnish)

Boil the egg for about 10 minutes, cool and peel. Cut circles of about 8 cm diameter from the bread (optionally with a wavy edge). Spread butter thinly on each circle. Wash and dry the lettuce, then place it along with the salmon on the bread. Whisk together honey and mustard well; season with a pinch of salt.

Quarter the egg and distribute over the breads. Drizzle with the honey-mustard sauce and garnish with parsley before serving.
