Ingredients

  • 12 cocktail tomatoes
  • 12 mini mozzarella balls
  • 3 bunches basil
  • 20 g pecorino
  • 30 g Parmesan
  • 2 cloves garlic
  • 1 tbsp pine nuts
  • 6 tbsp Olive oil
  • a pinch salt
  • 12 toothpicks

Instructions

    Tear the basil leaves, wash and pat dry. Grate both cheeses. Peel the garlic and cut into large pieces. Combine all ingredients with the pine nuts in a bowl and blend with an immersion blender while adding the olive oil. Season to taste with salt.

    Alternate threading washed tomatoes and mozzarella balls onto toothpicks, place them in a small baking dish, and cover with the pesto. Let the mixture rest, covered with cling film, for about 60 minutes at room temperature.
