Smarter Zwetschgendatschi
Smarter Zwetschgendatschi von Spoonsparrow: Healthy cake enjoyment thanks to whole grain and fresh fruits
Ingredients
- 42 g yeast (1 cube)
- 10 g cane sugar (1 tbsp)
- 250 ml milk (3.5% fat)
- 100 g butter
- 45 g honey (3 tbsp)
- 250 g whole wheat flour
- 280 g spelt flour type 1050
- 1 tsp salt
- 1 egg
- 1 kg plums
- 1 tsp cinnamon
Instructions

Combine milk, butter and honey in a saucepan and heat gently over low heat until the butter is melted. Let cool slightly, sprinkle in the yeast and stir.

Place flour and salt in a large bowl. Add egg and milk-butter mixture and mix vigorously with a wooden spoon. Knead with your hands into a smooth dough. Add a little flour if needed. Let rise covered for 60 minutes.

Meanwhile, wash, halve, pit and quarter the plums. Mix sugar with cinnamon; mix half of the mixture with the plums and let steep for 5 minutes.

Meanwhile, briefly knead the dough on a floured work surface and roll it out to about 1cm thick to the size of a baking sheet. Place on a baking sheet lined with parchment paper and cover with plum quarters. Bake in a preheated oven at 180 °C (top/bottom heat) for about 25–30 minutes.

Remove the Zwetschgendatschi from the oven, sprinkle with the remaining sugar-cinnamon mixture and let cool slightly. Serve lukewarm or cold as desired.
