Smarter Kaiserschmarrn with Beetroot
Herzhaft trifft süß – Der smarte Kaiserschmarrn mit Roter Bete von Spoonsparrow vereint die klassische Süßspeise mit deftigem Topping!
Ingredients
- 4 eggs
- 75 g fine oat flakes (10 tbsp)
- 120 g spelt wholemeal flour (8 tbsp)
- 1 tsp salt
- 0.5 tsp caraway seeds
- a pinch of raw sugar
- 200 ml Milk (3.5% fat)
- 1 Red Onion
- 1 red apple
- 400 g beetroot (4 beets)
- Pepper
- a pinch of cinnamon
- 2 tbsp Red wine vinegar
- 1 tbsp walnut oil
- 2 tbsp butter
- 40 g Roquefort cheese (1 piece; 52% fat in milk)

Instructions

Separate the eggs. Mix the yolks with oat flakes, flour, salt, caraway seeds, sugar and milk and let it swell for 10 minutes.

In the meantime, peel, halve and slice the onion into rings. Wash, quarter, core and slice the apple into sticks. Wash, peel and slice the beetroot into thin sticks.

Season the onion, apple and beetroot with salt, pepper and cinnamon. Add vinegar and walnut oil and mix thoroughly. Set aside.

Beat the egg whites stiffly and fold them into the yolk-oat flakes mixture. Heat the butter in a pan and pour in the batter. Fry over low to medium heat for about 10 minutes, turn the batter and fry for another 5 minutes.

Divide the batter cakes into 4 plates with two spatulas and fry for another 2-3 minutes while turning.

Arrange the Kaiserschmarrn on 4 plates and serve with beetroot. Tear the Roquefort cheese into pieces, place it on top of the Kaiserschmarrn and sprinkle with chili.
