Apple Crisp

Ingredients
- 6 Apples
- 1 Organic lemon
- 1 tsp cinnamon
- 1 tbsp Maple Syrup
- 150 g spelt whole grain flour
- 1 tsp Baking powder
- 80 g Muscovado Sugar
- 1 pinch Vanilla powder
- 1 pinch salt
- 100 g butter
- 25 g Pecans
- 40 g Walnuts
- 40 g Almonds
- 40 g rolled oats
- 400 g Vanilla Ice Cream
Instructions

Wash the apples, quarter them, remove the core and cut them into bite-sized pieces. Wash the lemon, dry it, finely grate the zest and squeeze the juice. Place the apple pieces in a pot with lemon juice, lemon zest, ½ tsp cinnamon and maple syrup and simmer for about 10 minutes. Place the apple mixture in a large or 8 small baking dishes.

Mix the flour with baking powder and combine with sugar, remaining cinnamon, vanilla, salt and cold butter to make crumbs. Chop the nuts and mix with rolled oats. Spread the crumbs over the apple mixture.

Bake the Apple Crisp in a preheated oven at 200 °C (180 °C convection; Gas: Mark 3) in the middle rack for about 25–30 minutes, let it cool slightly and serve warm with a scoop of vanilla ice cream.
