Smart Beef Goulash Basic Recipe

Ingredients
- 250 g Carrots (3 carrots)
- 150 g Celery Root (1 piece)
- 3 onions
- 2 tbsp Rapeseed oil
- 600 g Beef Goulash
- 45 g Tomato paste (3 tbsp)
- 600 ml Meat broth
- 0.5 tsp Peppercorns
- Salt
- Pepper
- 2 tsp Paprika powder
- 1 tsp Marjoram
- 1 sprig rosemary

Peel, peel, wash and dice the carrots and celery. Peel and slice the onions.

Heat oil in a pot. Brown the meat in it for 5 minutes over high heat. Add the vegetables and brown them vigorously for 5 minutes, stirring and scraping the browned bits from the bottom. Add the tomato paste and caramelize it for 4 minutes, stirring constantly; this lightly browns the tomato paste and gives the goulash a nice brown color. Then deglaze with 50 ml of broth and simmer for 3-4 minutes, stirring occasionally.

Pour in the remaining broth, season with salt, pepper, peppercorns, paprika powder, marjoram and rosemary. Simmer covered over low heat for about 1 1/2 hours until the sauce is thickened, stirring occasionally. Season the goulash with salt and pepper.
