Fennel and Pear Couscous
Fennel and pear couscous: a balanced composition of fennel, pears, and couscous with spicy and fruity flavor notes.
Ingredients
- 250 ml classic vegetable broth
- 100 g couscous (instant)
- 1 Red Onion
- 1 bulb fennel
- 1 pear
- 2 tsp Olive oil
- Pepper
- 1 tsp brown sugar
- 1 tsp coriander seeds
- Salt
- 100 g goat cheese
Instructions

Bring vegetable broth to a boil. Mix couscous in a bowl with the boiling broth and let it swell for about 8 minutes.

Meanwhile, peel the onion. Clean and wash the fennel. Shake off the fennel greens, chop them very finely and set aside.

Wash the pear, dry it, quarter it and remove the core. Slice the onion, fennel and pear with a vegetable peeler into thin slices.

Heat oil in a pan. Toast pepper, sugar and coriander in it over medium heat for about 1 minute. Add the onion, fennel and pear slices, and fry them golden brown in about 2 minutes over the same heat.

Add couscous to the pan, mix everything carefully and season with salt and pepper. Serve on plates with goat cheese and fennel greens.
