Beets with Radishes and Walnuts

Beets with radishes and walnuts from Spoonsparrow are not to be missed!

Ingredients

  • 800 g Beets
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 0.5 tsp ground cardamom
  • Pinch of cinnamon
  • 0.5 tsp ground cumin
  • 80 g Walnuts
  • 1 bunch radishes
  • 150 g Feta (45% fat in milk)
  • 10 g Herbs (1 handful; e.g. chives, parsley, sage, rosemary)
  • 2 tbsp balsamic vinegar

Instructions

    Peel the beets, preferably with oiled hands or disposable gloves, and cut them into bite-sized pieces. Mix with oil and season with salt, pepper, cardamom, cinnamon and cumin. Place in a baking dish and bake in a preheated oven at 200 °C (Fan: 180 °C; Gas: Mark 3) for 35–40 minutes.

    In the meantime, roughly chop the walnuts. Peel, wash and leave radishes whole or halve/quarter them depending on their size. Crumble the feta. Wash, dry and finely chop the herbs.

    Remove the beets from the oven and drizzle with balsamic vinegar. Serve sprinkled with nuts, feta, radishes and herbs.
