Small Waffles with Avocado Cream

Ingredients
- 200 g wheat flour
- 150 g spelt flour
- 1 tsp Baking powder
- 1 tsp sugar
- 1 tsp salt
- 1 tsp chili powder
- 220 g cold margarine
- 2 Avocados
- 1 handful coriander leaves
- 1 handful chervil
- 1 Red Onion
- 1 tbsp Lemon Juice
- Wasabi paste
- Sea salt
- 8 radishes
- vegetable oil (for the waffle iron)
Instructions

Combine both flours with baking powder, sugar, salt and chili in a bowl. Add margarine pieces and knead with a little cold water into a smooth, firm dough. Shape into a roll, wrap in cling film and chill for about 30 minutes.

For the herb cream, peel, halve and pit the avocados, then mash the flesh with a fork. Rinse coriander and chervil, dry and finely chop. Peel and dice the onion. Mix the herbs into the avocado along with lemon juice, wasabi and salt to taste.

Wash, trim and spiral-slice radishes with a vegetable peeler. Twist into small rosettes.

Heat the waffle iron and brush each side lightly with oil. Cut dough into 20 pieces and shape into balls. Place 2–3 on the iron at a time, close and press flat. Bake 3–4 minutes until golden brown. Remove, let cool slightly and serve topped with herb cream and radishes.
