Healthy recipe for small pear gugl without refined sugar from Spoonsparrow!

Ingredients

  • 1 pear
  • 1 tsp lemon juice
  • 70 g soft butter
  • 60 g Coconut blossom sugar
  • 1 egg
  • 100 g spelt whole‑grain flour
  • 2 tsp Baking powder
  • 150 g Yogurt (3.5% fat)
  • 0.5 Vanilla pod

Instructions

    Grease the gugl molds if needed and dust with flour.

    Wash the pear, remove the core and dice the flesh into small cubes. Drizzle with lemon juice. Beat the butter, coconut blossom sugar and egg until fluffy with a hand mixer. Sift in the flour and baking powder and fold in. Scrape out the vanilla bean’s interior. Add the yogurt, vanilla mark and pear to the butter mixture and stir through.

    Fill the dough into the molds and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 30 minutes. Let cool, then remove from the molds and set on a wire rack to finish cooling.
