Ingredients
- 1 apple
- 1 pear
- 175 g spelt whole-grain flour
- 1 tsp Baking powder
- 0.5 tsp cinnamon
- 0.5 tsp Cardamom
- 0.5 tsp cloves
- 0.5 tsp allspice
- 1 tsp orange zest
- 150 g grated walnuts
- 50 g Raisins
- 100 g butter
- 50 g beetroot syrup
- 3 eggs
- 0.125 l apple juice

Peel and halve the apples and pears, remove cores, and dice into small cubes. Mix flour with baking powder and spices. Fold half of the mixture into the fruit, add orange zest, walnuts, and raisins. Cream butter with beetroot syrup, gradually fold in eggs. Stir in the remaining flour.

Fill the batter into a parchment-lined pan, smooth the top, and bake at 150 °C (130 °C fan; gas range 1‑2) for 90 minutes, covering after 45 minutes.

Let cool completely, wrap tightly in foil, and rest for 3 days.

Before serving, heat apple juice until it becomes a syrup and drizzle over the cake.
