Small Chocolate Cakes in a Glass

These small chocolate cakes in a glass are a child‑friendly winter dessert. Quickly baked and naturally sweetened with pears.
Ingredients
- 1 ripe pear
- 1 tbsp Lemon Juice
- 85 g butter
- 40 g raw cane sugar
- 1 egg
- Pinch Salt
- 125 g spelt flour type 1050
- 1.5 tbsp cocoa powder (strongly defatted)
- pinch ground cinnamon
- pinch ground cloves
- Pinch Ground Cardamom
- ½ tsp baking powder
- 60 ml milk (3.5% fat)
- 1 tbsp powdered sugar made from raw cane sugar

Peel the pear, quarter it, remove the core and cut into small pieces. Mix with lemon juice.

Beat 70 g butter with sugar until fluffy, then fold in the egg and a pinch of salt.

Sift spelt flour with cocoa, spices, and baking powder; gradually stir in milk alternating with the butter mixture.

Fold the pear pieces into the batter, line glass jars with remaining butter, fill with batter. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 25 minutes.

Remove from oven, let cool and serve dusted with powdered sugar.
