Small Onion Tartlets

- 300 g puff pastry
- 2 tbsp olive oil
- 2 mild white onions
- 200 g Sour Cream
- 2 egg yolks
- 50 g grated cheese (e.g., Bergkäse)
- Salt
- freshly ground pepper
- 2 tbsp freshly chopped oregano

Lay out the puff pastry, if necessary roll it to a thickness of 3-4 mm and cut into about eight rectangles (approximately 10x12 cm). Brush the edges with oil and place the dough on a baking sheet lined with parchment paper.

For the filling, peel the onions and slice them into thin rings or shave them. Mix the sour cream with the egg yolks and cheese. Season with salt and pepper and spread the mixture onto the pastry, leaving the edge free. Sprinkle with onions and oregano, drizzle with a little oil, season again, and bake in the oven for about 20 minutes until the onions are golden brown.
