- 150 g Low-Fat Quark
- 6 tbsp oil
- 1 egg
- 2 tbsp milk
- 1 tsp salt
- 300 g flour
- 3 tsp baking powder
- 30 g clarified butter
- 50 g smoked pork belly (Wammerl)
- 500 g red onions
- 250 g scallions
- 50 ml sour cream
- 2 Eggs
- Salt
- black pepper (ground fresh)

Dice the pork belly finely, slice the red onions into wedges, and cut the scallions lengthwise into finger‑sized pieces, then halve or quarter them. Heat the clarified butter, sauté the pork belly until lightly browned, then add all onions and cook until they turn pale yellow. Remove from heat and let cool.

Preheat the oven to 190 °C (375 °F). Line a baking tray with parchment paper.

In a bowl whisk together the quark, oil, egg, milk, and salt. In another bowl mix the flour with the baking powder, then fold half of this dry mixture into the wet ingredients. Quickly stir in the remaining dry mix until a smooth dough forms. Roll out the dough evenly onto the prepared tray and lift up a small edge.

Whisk the sour cream with the eggs and season heavily. Combine this egg mixture with the onion blend, spread it evenly over the dough. Bake the onion flatbread for about 30 minutes until golden brown.
