Small Meatball Bites

Ingredients

  • 250 g Salsiccia (raw)
  • 250 g pork mince
  • 1 egg
  • 2 tbsp breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Vegetable oil
  • 60 g sun‑dried tomatoes in oil
  • 200 g Cream cheese
  • 1 tsp lemon juice
  • 2 tbsp pistachio nuts
  • 1 packet garden cress
  • 1 handful radicchio
  • 1 focaccia

Instructions

    Press the skin off the salsiccia and mix with the mince, egg and breadcrumbs. Season with salt and pepper and shape into about 12 small meatballs. Fry in a hot pan over oil for about 8 minutes on each side until golden brown.

    Drain the tomatoes well and blend them with cream cheese, lemon juice and pistachios to a fine puree. Season with salt and pepper.

    Trim the garden cress. Wash, trim and dry the radicchio, then cut into small pieces.

    Cut the focaccia horizontally into about 12 cubes. Spread the tomato‑pistachio spread on the lower halves of each cube and top with one mini meatball. Place a sprig of garden cress on the radicchio and close with the upper half of the bread. Secure with toothpicks and serve.
