Mozzarella Focaccia

Ingredients

  • 1 Aubergine
  • 2 Paprika (yellow and red)
  • 1 Garlic clove
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 4 small focaccia breads
  • 1 Tbsp freshly chopped thyme
  • 200 g mozzarella
  • Olive oil (for grilling)

Instructions

    Wash, trim, halve lengthwise, and cut the aubergine into pieces or slices. Wash, halve, trim, and finely chop the paprika. Peel and finely mince the garlic. In a pan with hot olive oil, sauté the vegetables for 3-4 minutes while stirring; any liquid should evaporate. Season with salt and pepper and remove from heat.

    Cut the focaccia horizontally in half and top each piece with the cooked vegetables. Sprinkle thyme over the topping. Drain the mozzarella well and slice it. Distribute the cheese slices over the vegetables, place the other bread halves on top, and grill the sandwiches in an oiled contact grill for 4-5 minutes (or as per manufacturer instructions) until golden brown.

    Remove from the grill and serve on plates, optionally halved.

    Serve the focaccia with mozzarella alongside fresh salad if desired.
