Sliced Turkey with Mushrooms

Ingredients
- 700 g turkey breast fillet
- Salt
- black pepper (freshly ground)
- chili powder
- 2 tbsp clarified butter
- 2 Spring Onions
- 1 Carrot
- 300 g small mushrooms
- 200 ml whipping cream
- 100 ml milk
- 2 tbsp light sauce thickener
- 1.5 cups rice
- 1 celery stalk
- 1 tbsp oil
- mild vegetable broth

Slice the turkey into strips and season with salt, pepper, and chili.

Wash, trim, and cut the spring onions diagonally into about 1 cm pieces. Clean and halve or quarter the mushrooms. Peel the carrot and slice into thin sticks.

Brown the turkey in a hot pan with clarified butter for about 4-5 minutes on each side. Remove and keep warm. Briefly sauté the carrot sticks, then remove again. Next, cook the spring onions and mushrooms for about 2 minutes, pour in cream and milk, bring to a boil, stir in the sauce thickener, and season with salt, pepper, and chili. Return the turkey, heat through, and serve with steamed celery rice.

Rinse the rice under running water, grate the celery finely after washing it. Sauté the rice in oil, add the celery, pour in just under twice the amount of mild vegetable broth, bring to a boil, cover, and simmer on low heat for about 20 minutes until absorbed.
