Sliced Turkey in Asian Style

Ingredients

  • 20 g dried Mu-Err mushrooms
  • 500 g Turkey breast fillet
  • 4 tbsp soy sauce (add more to taste)
  • 4 tbsp rice wine
  • 2 cloves garlic
  • 5 g ginger (1 piece)
  • 250 g snow peas
  • 250 g carrots
  • 1 stalk leek
  • 100 g Chinese cabbage (1 piece)
  • 3 tbsp oil
  • Salt
  • Pepper
  • a handful of soybean sprouts

Instructions

    Soak Mu-Err mushrooms in warm water for about 30 minutes, then drain.

    Rinse the turkey breast under cold water, pat dry, and cut into strips. Mix 2 tbsp soy sauce with rice wine and marinate the turkey strips in it.

    Peel and finely chop the garlic and ginger. Wash and trim the snow peas, carrots, leek, and Chinese cabbage. Slice the carrots and cabbage into thin strips and the leek into fine rings.

    Heat oil in a wok or skillet. Quickly sauté the garlic and ginger. Add the meat and cook for 5 minutes. Add the carrots and fry for another 2–3 minutes. Then add the remaining vegetables, pour in the leftover soy sauce and rice wine, and stir-fry everything for 3–5 minutes. Season with salt, pepper, and additional soy sauce to taste. Rinse the soybean sprouts hot, shake dry, and fold them into the dish.
