Skewers with Turkey and Mixed Greens

Ingredients
- 400 g turkey breast fillet
- 4 eggs
- 2 tbsp heavy cream
- 2 tbsp butter
- 2 yellow bell peppers
- 250 g cocktail tomatoes
- 200 g pearl onions
- 2 red bell peppers
- Salt
- Pepper (freshly ground)
- 0.5 tsp Curry Powder
- chili flakes
- 6 tbsp vegetable oil
- 2 handfuls mixed salad greens (spinach, arugula, beet leaves)
- 3 tbsp Lemon juice
Instructions

Wash the turkey breast, pat dry and slice into thin pieces. Whisk the eggs with cream and season with salt and pepper. Cook an omelet in hot butter and cut into bite‑size pieces.

Wash the bell peppers, halve, seed and chop. Wash and halve the tomatoes. Peel the onions. Wrap the omelet pieces around the turkey slices and alternate with onion, pepper and tomato on wooden skewers. Season with salt, pepper, curry and chili.

Brown the skewers in 2 tbsp hot oil for 4‑5 minutes on all sides. Rinse and dry the salad greens. Arrange on plates and drizzle with remaining oil and lemon juice. Place the skewers on top of the greens and serve immediately. Offer a yogurt dip if desired.
