The rice with minced meat, vegetables and apricots by Spoonsparrow is a quick lunch for the whole family.

Ingredients

  • 200 g rice
  • Salt
  • 30 g cashews
  • 200 g mixed minced meat
  • 1 tbsp Rapeseed Oil
  • 1 stalk leek
  • 3 Carrots
  • 70 g dried apricots
  • 1 tsp curry powder
  • 0.25 tsp cinnamon

Instructions

    Wash the rice thoroughly and bring double the amount of lightly salted water to a boil, then simmer on low heat for about 20 minutes.

    Roast cashews in a dry pan until light brown, remove, let cool slightly, then roughly chop.

    Trim leek and carrots, cut them lengthwise into quarters and finely slice.

    Dice apricots into cubes.

  5. 5.

    Brown the minced meat in oil until crumbly‑brown, season with salt, curry powder and cinnamon. Add leek, carrots and apricots, stir in, and simmer for about 10 minutes; add a little water if needed and adjust seasoning.

    For serving, fold the cooked rice together with the cashews into the meat mixture.
