Spicy Red Poultry Curry

Ingredients

  • 3 chicken breast fillets (ca. 600-800 g)
  • 2 tsp starch
  • 1 onion
  • 2 Garlic cloves
  • 2 lime leaves
  • 2 red chilies
  • 1 tbsp oil
  • 250 ml unsweetened coconut milk
  • 2 tbsp red Thai curry paste
  • 1 tsp sugar
  • 1 tbsp fish sauce
  • Basil
  • coriander

Instructions

    Cut the chicken fillets into bite‑size cubes, dust with starch and mix well. Peel and finely dice the onion and garlic. Halve the lime leaves and cut into very fine strips. Slice the chilies lengthwise, remove seeds and chop finely.

    Heat oil in a wok and quickly sear the meat; then add onion and garlic. Add coconut milk, curry paste, sugar and fish sauce, cover and simmer over low heat for about 1 minute. Rinse basil and coriander leaves, pat dry and fold into the dish before serving. Serve with basmati rice.
